Here’s the recipe if you want to give it a try at home.
Pork Belly Adobo
2 lbs Pork Belly, cut into 1/2 inch dice
2 Tbsp canola oil
1 Tbsp minced garlic
1 Tsp minced thai chilies
1 Bay Leaf
4 Tbsp White Vinegar
1/4 cup soy sauce
2 Cups Chicken Stock
1 tsp sugar
1 Tsp Ground Black Pepper
1. In a large sauce pan on medium high heat, add canola oil and brown pork belly for 5 min or until caramelized
2. Add garlic and chilies and saute for 1 min.
3. Add bay leaf, sugar, black pepper, vinegar, soy sauce and chicken stock and bring to a boil. Cover and turn heat down to medium low and simmer for 30-45 min or until pork belly is tender.
4. Serve over steamed Jasmine Rice.
